At CHAGA, guests are welcomed with a water infused with carrot, lemon thyme and yuzu.

Prepared directly in a mixing glass filled with ice.
Gin, red vermouth and Campari are stirred together for around 20 seconds before being strained into the final glass.

The stirring controls the temperature and dilution at the same time, which changes the texture and balance of the cocktail.

Finished with an orange peel, expressed over the glass to release its oils before serving.
