“Citrus-cured hamachi,
bee pollen cream, pickled pumpkin, fennel flowers, semi-dried tomato water.

A composition of clarity, acidity, and floral nuance.
Briefly on the menu, quietly memorable.”

Meet the Chef

Altin Mero expresses a cuisine shaped by Mediterranean roots, Scandinavian purity and refined Asian influences. A style defined by contrast, clarity and a deep respect for seasonality.

Born in Albania and raised in Greece, his journey through some of the world’s most demanding kitchens led him to a philosophy grounded in seasonality. Ingredients lead, instinct follows.

«My cooking is a reflection of where I come from and what I’ve experienced — always evolving, always rooted in the seasons.»

With MERO, he brings this vision to life in the heart of Antwerp — a place where comfort meets curiosity, and every dish carries its own story.
