Chettinad Chicken Biryani tells the story of the Chettiar community – Tamil traders whose travels across South and Southeast Asia enriched one of India's most distinctive regional cuisines.

Unlike many North Indian biryanis made with basmati rice, Chettinad biryani uses fragrant seeraga samba rice, prized for its ability to absorb spices 🍚🌾
