It’s been a while since we filmed one of these 🎥

Summer got busy, like, really busy… but it’s time to catch up! Three new seasonals just landed, and we sat down to taste them together using with our Hario Switch recipe (full recipe in another post).

☕️ Ethiopia — Chelchele: intense, sweet, tropical. Pineapple, passion fruit, blueberry jam, cacao nibs.

☕️ Ethiopia — Raro: the classic washed Ethiopian we never get tired of. Dried apricot, lemonade, berries, Earl Grey.

☕️ Costa Rica — Los Campos: the whole farm in one bag. Red plum, cherry, gooseberry, dark chocolate.

Fair warning: this was filmed early, before our first coffee of the day 😅 so bear with the low energy — the coffee speaks for itself.

2 years of Boo 🎉

It doesn’t sound like much, but since we launched Boo on August 21, 2024, so much has happened that it honestly feels more like 5…

We didn’t really have time to plan a party, we’ve been swamped for months now, but we owed ourselves a pause to look back. And what a road it’s been.

We wanted to retrace that journey with you: from our chaotic, scrappy beginnings, to these last few months where you’ve kept us busier than ever.

And busy isn’t slowing down anytime soon, we’re already deep into some pretty exciting projects for what’s next. More on that soon. 👀

But today, our minds are on gratitude, for everyone who’s supported us since day one. Because at the end of the day, we’re here thanks to you.

We did it. I’m the 2026 World Coffee Roasting Champion, and I couldn’t be prouder to bring this title home to Boo. 🏆

Still barely processing this.
This title is the result of years of curiosity, passion, and stubbornness, and months of relentless preparation. Since last October, Dajo Aertssen and I have been working together to build something we truly believed in. From winning the Belgian nationals to pushing even harder from January onwards for the Worlds. Every session, every roast, every cupping mattered.

This year, the competition took place right here in Brussels, one year after the Belgian SCA chapter reopened. I’m incredibly proud to represent the country and the community, and I hope this title puts Belgian specialty coffee on the map in a way it deserves. A huge thank you to .be and everyone who believed in and supported the rebirth of this chapter. This one’s for Belgium too. 🇧🇪

On a personal level, this is something I genuinely never thought I’d achieve a few years ago. This competition pushed me to challenge everything I knew, and more importantly, to actually believe in myself.

For Boo, we’ve had hard times, people who doubted us, moments where we questioned everything. This win is proof that there’s still room in specialty coffee for new roasters, new visions, new ways of doing things. Don’t be afraid to shake things up.

And Dajo, I can’t thank fate enough for putting you in my path. As a coach, a business partner, a friend. I owe you so much. Your knowledge, your dedication, your patience, I wouldn’t be standing here without you. Thank you, coach! Truly.

To every new roaster out there: believe in yourselves. Keep learning. Keep pushing. There’s room for you. 🫶

From June 25th to 27th, World Of Coffee Brussels takes over our calendar, and we’re showing up everywhere at once!

Benoit will be holding the fort across the festival, popping up with friends old and new. Swipe for the full schedule, come say hi, grab a cup, and let’s talk coffee.

And Benjamin? He’ll be mostly impossible to reach this week, busy representing Belgium at the World Roasting Championship. No pressure, just months of practice on the line. 😅
