Ramadan Treats | Episode 03 🌙

Mini Strawberry Cobbler

Filling
• 8 strawberries, chopped
• 1–1½ tbsp sugar
• 1 tsp cornstarch

Mix and place in a small baking dish.

Topping
• ⅓ cup flour
• 2 tbsp sugar
• ½ tsp baking powder
• pinch salt
• 2 tbsp cold butter
• 2–3 tbsp cold milk
• few drops vanilla

Rub butter into flour mixture, add milk to form a soft dough.

Assembly
Spread topping over strawberries.
Add small cream cheese dollops on top.

Bake
180°C for 20–25 min
until golden and bubbly.

Ramadan Treats | Episode 02 🌙

Bangladeshi Chinese Vegetable Curry (with Chicken)

Ingredients:
• 1 cup pre-fried/sautéed chicken
• ½ cup carrot (cubes)
• ½ cup capsicum (sliced)
• ¼ cup mushroom
• ¼ cup baby corn
• 1 green chilli (slit)
• 1 tbsp garlic (chopped)
• 1½ tbsp soy sauce
• ½ tsp black pepper powder
• ½ tsp testing salt
• ½ tsp Shade Magic (Maggie or Radhuni)
• Salt to taste
• 2 tbsp oil
• 1½ cup water
• 1½ tbsp cornflour + 3 tbsp water (slurry)

Process:

• Boil vegetables 70–80%, then transfer to cold water and set aside.
• Heat oil, saute garlic. Add the baby corn, stir fry 1–2 mins on high heat.
• Add pre-fried mushroom (or fry now).
• Add pre-fried chicken and mix well.
• Pour water or veg/chicken stock and bring to a boil.
• Add remaining boiled veggies, soy sauce, black pepper powder, testing salt, Shade Magic & salt.
• Add cornflour slurry, stir until thick & glossy.
• Finish with green chilli.

জন্মদিনের পরেরদিন সকালটা যেনো আরেকটা আনন্দমাখা দিনের শুরু। টেবিলে ব্রেকফাস্টের সাথে লেফটওভার কেক স্লাইস, এক কোনায় ফুল, গিফটগুলো বার বার ছুঁয়ে দেখা সাথে গতদিনের হাসি-আনন্দের মুহুর্তগুলো! আমি বিশ্বাস করি আমরা যখন আনন্দের মাঝে থাকি তারচেয়েও বহুগুন খুশি ফেরত আসে যখন স্মৃতিগুলো আমরা মনে করি; বার বার অনেকবার। 🌻🤍
