Biryani, biriani, biriyani, buriyani, beryani or beriani (Arabic/Urdu: بریانی, Bengali: বিরিয়ানি, Hindi: बिरयानी, Punjabi: ਬਿਰਯਾਨੀ,Malayalam: ബിരിയാണി, Tamil: பிரியாணி, Telugu: బిర్యాని, Sinhala: බුරියානි) is a rice-based dish made with spices, rice (usually basmati) and chicken, mutton, fish, eggs, or vegetables. The name is derived from the Persian word beryā (n) (بریان) which means
"fried" or "roasted". It originated in India and was brought to Persia by Muslim travellers and merchants from India. It was one of the most famous dishes in the kitchen of the Mughal Emperors. It is very popular in South Asia and is a key element of the South Asian cuisine. Hyderabad, Malabar, Delhi/Agra, Dhaka, Kashmir, Kolkata, Lucknow and Lahore, are the main centers of biryani cuisine. A typical biryani meal provides 500 k Cal of energy.
~Antiquity of Bibiana & Biryani~
Bibi Biryani isn’t just your everyday biryani. Its biryani filled with hopes, integrity and aspirations created with affection and passion. The recipe for the biryani and more importantly its ideology comes from a very unlikely source, a Muslim noblewoman in the late 15th century. That woman was Begum Bibiana also called Bibi by her loved ones. Bibi was a woman far too progressive for her era. She dreamt of standing on equal ground with men, a thought which was considered preposterous at the time. Since childhood Bibi was a very active and energetic girl. She preferred playing outdoors to playing with dolls at home. But that had to stop after she reached a certain age. She hailed from an affluent Muslim family and it simply wouldn’t do to have the young lady of such a family playing outdoors with boys. So, she was effectively locked in at home. But Bibi wouldn’t just take that sitting down. She desperately resisted her parent’s decision and they were forced to make a concession. Bibi would be allowed to learn cooking in the kitchen. This might not seem like much now but at the time the kitchen of noble households at that time was largely dominated by male chefs and it was almost unheard of for the lady of the house to actually cook in the kitchen. Finally Bibi was given a place where she could utilize her brilliance. She put all her devotion to cooking and she came up with many new recipes. But her greatest creation wouldn’t come to her until she met the love of her life. Bibi was set up in an arranged marriage with the son of another noble family as was the custom in those times. In him Bibi not only found a loving husband but also her biggest supporter. He loved to eat Bibi’s cooking and he became the reason why she cooked. And it was for him that Bibi came up with her greatest recipe. The recipe was one for a biriyani. And Bibi’s husband loved it so much that he wanted to share it with the whole world. It was also Bibi’s dream to gain recognition for something she had strived for. But unfortunately due to the circumstances during that era it wasn’t possible. It wasn’t spread but Bibi still managed to have her recipe passed down to future generations. Today couple of centuries later, we have taken it upon ourselves to fulfill Bibi’s dream and spread the taste of her Biryani far and wide. The biryani is not only made in accordance to her recipe but every member of our team is well versed in Bibi’s ideology of never giving up and making the best out of what you have.
