Ingredients:
For the broth:
1 kilograms of chicken bones
2 Liters of water
1 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon salt
1 teaspoon black peppercorns
2 cloves garlic, crushed
1 k**b ginger, peeled and thinly sliced
For the noodles:
500 grams rice noodles
For the toppings:
500 grams boneless, skinless chicken breasts, cooked and shredded
1 tablespoon fish sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
1 clove garlic, minced
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
1 cup bean sprouts
1/4 cup chopped cilantro
1/4 cup chopped scallions
Instructions:
Create the Broth:
Rinse the chicken bones under cold running water.
Place the rinsed chicken bones in a large pot and cover with water.
Bring the pot to a boil, then reduce the heat and simmer for 2 hours, or until the chicken bones are tender.
Remove the chicken bones from the pot and discard them.
Strain the broth through a fine-mesh sieve.
Skim off any fat from the broth's surface.
Season the broth with fish sauce, soy sauce, salt, and black peppercorns.
Add the garlic and ginger and simmer for an additional 5 minutes.
Cook the Noodles:
Follow the package directions to cook the rice noodles.
Prepare the Toppings:
In a skillet over medium heat, cook the shredded chicken until lightly browned.
Season the cooked chicken with fish sauce, soy sauce, sesame oil, garlic, onion, and carrots.
Continue cooking for 5 minutes, or until the vegetables are tender.
