Peking duck is a dish from Beijing (Peking) that has been prepared since the Imperial Era in China.

As shown in the photo below at 3 Dragons at Pearl the Peking duck is roasted in a closed vertical or hung oven. It takes over 48 hours to prepare this dish.

TWO DISHES PREPARED WITH ONE ORDER
- The crispy skin is often eaten with spring onions, cucumbers and hoisin sauce with pancakes rolled around the fillings.

- The meat is usually used for a separate stir fried (boneless or with bone) main dish or eaten as extra stuffing along with crispy skin, pancakes and fixings.

First, air is pumped under the skin through the neck to separate the skin from the fat. The duck is then drenched in boiling water for a short while before it is hung up to dry. While it is hung, the duck is glazed with a layer of honey syrup. Having been left to stand for 24 hours, the duck is then roasted in a hung oven (vertical) for atleast 6 hours until it turns shiny brown.
