We're thrilled to welcome Chef Jason Howard to Local & Co. Barbados as our new Chef in Residence, working alongside Executive Chef Stewart and the whole Local team.

This partnership just makes sense. Our philosophies align: sustainable and regenerative, local first — supporting our farmers, fishers, growers, artisans and producers, while showcasing everything Barbados and the wider Caribbean have to offer.

For us, this has always been bigger than what's on the plate. It's about strengthening our local economy, reducing reliance on unnecessary imports, cutting food waste, and proving what's possible when we invest in our ingredients, our people, and our culinary identity. And doing it all with some kick-ass food. Locally done.

Huge respect and thanks to Chef Sophie Michell, whose passion, creativity and hard work built the foundation Local & Co. stands on today — and to our management team and everyone behind the scenes who's helped make this brand a pioneer of the sustainable movement.

Now, it's time to build on that foundation. Chef Jason brings his own Modern Caribbean perspective to the table, ready to push some boundaries and have a little fun along the way.

Expect even more local and regional produce, more creativity, more sustainability, and some seriously good food. New menus, new collaborations, intimate dinners, special events, and a few surprises along the way.

Chef Stuart Fawcett is moving up from Head Chef to Executive Chef.

Born and raised in the North of England, his passion for food was uncovered at 13, washing up on weekends and holidays in local kitchens.
At 24 he moved to Australia and became head chef at Sydney’s Café Morso, where the team won Restaurant of the Year in 2008. He spent a decade in the UK’s heavyweight kitchens, including Aubergine, Gauthier, and a stint in Paris, before spending four years as head chef at Seven Park Place, where he kept the restaurant’s Michelin star firmly in place.

Since moving to Barbados in 2017, Stuart has led kitchens at Tides and Lonestar, with a brief UK detour at Nomura Bank, before returning in 2025 to join us at Local & Co as Head Chef, finding a more purposeful side of being a chef through farm to table cooking.

Stuart is now stepping into the Executive Chef role, locked in and ready to keep every dish sustainable and seriously good.

Long before Local & Co., these walls had already witnessed a remarkable history.

Built circa 1780, this building has stood for over two centuries. It held sugar and rum, housed trade and commerce, a lumber yard and one of Barbados' earliest soft drink factories. It stood in conversation with the sea, the jetty and the merchant life of Speightstown. In time, shops, cafés, restaurants and even a bank would occupy these same walls.

While so many buildings of this age are torn down and lost forever, we chose a different path. We made the decision to renovate, restore and renew its purpose.
