When we asked .melbourne head chef .gangho what he eats every time he returns home to South Korea, he said “Dwaeji Gukbap.”

The classic Korean pork bone based soup lead us to create our own version this winter and also borrows inspiration from the delicious and simple Chinese scallion oil noodles (Cong You Ban Mian).

The pork belly is smoked low and slow and served in our own pork bone and chive broth, with roasted alliums and a side of salted shrimp chilli oil.

When our friendly neighbourhood restaurant was reviewed in 2017 just one month after opening by Terry Durack it was big for us. With a 14.5 score we went from never imagining our small restaurant in the Good Food Guide to pushing ourselves for that hat which was suddenly within reach. The following year we were anonymously reviewed again (no write up) and awarded our hat.

Fast forward through 8 years of ups and downs and I can tell you this - a positive review published by can do wonders for a small business like ours. For our team, for our brand, for business.

While we’re grateful, we know it’s not invincibility armour. We’re only as good as the next time someone sits down to eat with us — and yes, the occasional 2-star Google review will still keep us up at night.

So regardless of hats, we will always stick to our core promise of serving up delicious food and warm hospitality. Happy to be your next “bolthold” 😇
