Whether it's a Wagyu Burger by the fire, a house-made pie on the verandah or our Buffalo Ragu Rigatoni with a pint, there's something for everyone.

Our bar, cocktail lounge and verandah are all walk-in only, so there's no need to book. Just drop in anytime from 11am to 9pm and enjoy a relaxed pub meal, your favourite drink and warm country hospitality.

Welcome Back, Head Chef Callum Moyne | We're incredibly pleased to welcome Head Chef Callum Moyne back to a full-time role in the Watervale Hotel kitchen.

Many of you will remember the laundry fire three years ago, where Callum was the first responder. Following a long recovery, he has now returned fully fit and ready to lead the kitchen once again.

Callum has played an important role behind the scenes in developing many of your favourite dishes, including our Gourmet Wagyu Burger and our current Winter Menu alongside Nicola.

His return also allows Nicola to focus even more attention on Penobscot Farm, our degustation experience and strengthening the connection between our farm and every plate we serve.

We're delighted to have him back where he belongs.

Watervale Hotel Guesthouse – Reluctantly For Sale

The Watervale Hotel Guesthouse is a six bedroom guesthouse right next door to the Watervale Hotel. The Guesthouse is an important and profitable part of our business, but we are faced with the need to raise capital to fund the development of the Woolshed at Penobscot Farm. The Woolshed is being developed as a Function Centre to provide signature dinners for The Ghan with service contracted to start in March 2027.

Ideally the Guesthouse will continue operation as a BnB after its sale either in collaboration with, or under continued management by the Watervale Hotel.

We are happy to sell to someone who wants to manage the Guesthouse as part of their own portfolio of tourist accommodation or as revenue generating part time employment for a local – in which case we can act as a booking agent, be contracted to provide catering and services, and collaborate with marketing.

We are also happy to sell and lease-back the Guesthouse to a passive investor.
