The most important thing about cooking is always tasting your own food and adding and changing ingredients to get the right balance and perfect flavour. I enjoy cooking fresh healthy, comfort food presented beautifully. I have followed in the

footsteps of my mother, who was an amazing cook and way ahead of her time. Iโ€™ve always loved to cook fresh healthy food for myself, my family and friends. I love entertaining and always make use of what is in abundance that season. Lemons are always in season and one of the most versatile fruits you can get. I have looked around and there are no recipe books that focus on lemons and the many things they can be used for. Lemons are one of the easiest to use fruits and grow in many yards Australia wide. They can be used in savoury dishes, salads, drinks, and many deserts. I am not just a passionate cook, but also a passionate gardener. For me they go hand-in-hand. I have always grown my own fresh lemons, a variety of herbs including basil, parsley, coriander, thyme, chives, and mint. Some of the other produce I grow includes chillies, and an array of colourful tomatoes to add interest to my dishes. I grow many fruit trees like lemons, limes, oranges, and mandarins. I also grow many other fruits such as apples, plums, figs, peaches, pears, nectarines, passionfruit and even grapes. Having such a variety of produce at my fingertips inspires and allows me to express myself through cooking. ๐Ÿ‹

I follow many chefs including Donna Hay and Marian Grasby and over the years used many Womens Weekly cookbooks.They have been the biggest inspiration for me in my cooking. I aspire to be like them. I am in awe of what they have achieved. In this cookbook, you will find many of the recipes that Iโ€™ve cooked many times over the last 40 years. They have been adapted from the original recipes to some with newer ingredients that are available today healthier, cleaner and tastier.๐Ÿ‹

I have never tired of creating beautiful food to be enjoyed.Iโ€™ve always enjoyed every moment in the kitchen and produced some beautiful food that Iโ€™m very proud of. I would love to share my recipes and styles of cooking with Australia and the world. Lemons are not only grown in many aussie backyards but also worldwide. I want to write a cookbook with recipes that focus on this wonderful underrated fruit which you can pick straight from your own tree. ๐Ÿ‹ Lemons are fun to cook with and fresh off your own tree. They can be used in marinades, sauces, cakes, salads, drinks and almost anything you can think of. There is always an abundance of lemons to share from your own backyard,with your parents, grandparents, neighbours and friends. ๐Ÿ‹ Take them home and just start cooking. There's just something about having them in your house and being able to use the whole lemon including the rind, juice and flesh. On a recent trip to Italy and the Amalfi Coast with my family. I had the pleasure of seeing so many beautiful lemon trees, lemon inspired ceramics, lemon recipes, limoncello, even lemon coloured buildings. There was a faint scent of lemons rushing through the air. This has inspired me to create my own beautiful and colorful recipe book focusing on all things lemon. Putting this book together has been something that Iโ€™ve thought about many times over the years as a legacy for myself and my family and friends. A long career of cooking and many hours in the kitchen have also inspired me to move forward with this beautiful and useful recipe book. ๐Ÿ‹

I truly hope that you enjoy reading and cooking my delicious recipes. My daughter from Adelaide recently gave me the most amazing apples I have ever seen or used. One of them was around 500 g which is huge and theyโ€™re all homegrown the most beautiful produce that youโ€™ve ever want to use in the kitchen so I cooked froze and dehydrated, but not one of them was wasted๐Ÿ๐Ÿ๐Ÿ and this was one of those times that I forgot to get a photo of the finished product๐Ÿ˜ณ because it was all eaten before I remembered ๐Ÿ‘Œ๐Ÿ๐Ÿ๐Ÿ๐Ÿ˜ณ

And he decided that needed a better position so he moved it. Prawn Tacos with Lemon Siracha Aioli ๐Ÿค๐Ÿค๐Ÿค โญ๏ธ๐Ÿ‹โญ๏ธ

Ingredients
Packet of soft tacos
Packet of Asian salad mix or ( Asian slaw) available at most supermarkets
I cup of Lemon Aioli ( see recipe)
2 dsp siracha
3/4 cup of sweet chilli sauce
Bunch of fresh coriander
16 green prawns more if desired
Olive oil

Add oil to the pan cook the green prawns for approximately two minutes on each side on medium heat remove from pan and toss in the sweet chilli sauce. Return to the pan and cook lightly on each side a further 30 seconds.

Clean the pan add some extra olive oil heat the soft taco shells in the pan until they are warm and showing a bit of colour .

Combine the Sriracha with the lemon aioli add Asian salad mixed to each taco top with prawns, coriander and add lemon aioli and siracha to each taco.

I added the aioli and Sriracha to a squeeze bottle to make it a bit easier to apply to the tacos .

You can buy an already prepared aioli and add the lemon juice and lemon zest and combine well.

Lemon Aioli recipe below โญ๏ธ๐Ÿ‹๐Ÿ‘‡
4 egg yolks
1/2 teaspoon garlic paste
1 teaspoon Dijon mustard
1 cup of olive oil
2 dsp of lemon juice
1/2 teaspoon of lemon zest
Sea salt to taste

In food processor add egg yolks mustard, garlic salt and zest blend for a few more minutes gradually add a cup of olive oil in a stream then add lemon juice Process continually until the mix is nice and creamy in co-op. This will take a few minutes. Keep in the fridge for approximately seven days.

Roasted Potato salad with Lemon Aioli ๐Ÿ‹๐Ÿ‹๐Ÿ‹

1 kg Baby potatoes cut in half
2 dsp minced garlic
1/4 cup of Olive oil
3/4 cup of lemon aioli
100 grams of rocket
Sea salt to taste
Preheat oven to 180 Celsius
Combine the potatoes with the minced garlic olive oil and sea salt flakes cook in hot oven for 45 minutes approx until roasted and cooked through .
Cool potatoes then combine the potatoes and the lemon aioli serve on the rocket .
