Passionfruit Summer Spritz ☀️🍹

Fresh, sparkling and easy to prepare by the jug, this cocktail is made for summer entertaining.

Makes approximately six standard drinks (30ml vodka or one shot per serve).

Ingredients:
* Pulp of 4 passionfruit
* 180 ml vodka
* 90 ml fresh lime juice
* 60 ml sugar syrup
* 500 ml chilled soda water
* 1 lime, thinly sliced
* Ice
* Fresh mint
* Extra passionfruit to garnish

Method:

Add the passionfruit pulp, vodka, lime juice and sugar syrup to a large jug.

Stir well, then add plenty of ice and the sliced lime.

Pour in the soda water just before serving and stir gently.

Divide between glasses and garnish with mint and extra passionfruit.

For a refreshing alcohol-free version, leave out the vodka and add extra soda water or sparkling apple juice.

🌸 Good food, lovely company and a beautiful backdrop for the photos!

SPRING PEA, MINT AND LEMON CROSTINI

Fresh, colourful and easy to prepare, these crostini are perfect for spring entertaining.

Ingredients:
• 1 French baguette, sliced
• 2 cups frozen peas, thawed
• 150 g ricotta
• 1 tablespoon lemon juice
• Zest of ½ lemon
• 2 tablespoons chopped fresh mint
• 1 small garlic clove, crushed
• 2 tablespoons olive oil, plus extra for brushing
• Salt and cracked pepper
• Freshly grated Parmesan cheese
• Extra mint and lemon zest to serve

Method:

Brush the baguette slices lightly with olive oil and either grill until golden (turning once to toast both sides) or toast in a sandwich press until golden.

Place the peas, lemon juice, lemon zest, mint, garlic and olive oil in a food processor. Pulse until roughly combined, keeping some texture.

Season with salt and cracked pepper.

Spread each crostini with ricotta and top with the pea mixture.

Finish with freshly grated Parmesan cheese, mint leaves and a little extra lemon zest.

Serve immediately for a bright and delicious spring appetiser.
