Concept of hydration
Depending on what is the ultimate result you want your pizza to be.

Given cooking in the same 400 degrees oven
More hydration=softer crust

Hydration is not the more the better ๐Ÿ™…๐Ÿคฆ
A very high hydration dough does not always go well with a very hot oven. Because the pizza will burn before the dough is properly cooked. Resulting in an undercooked pizza, rather than a light well cooked pizza.

Traditional napolitan pizza dough hydration ranges from 55-62%

BUT we have been making pizza fresh from scratch the traditional way in the last 6 years.

This is what makes us different from other pizza businesses

It is manageable within our skill set.

And we would like to keep it this way.

PS: Have you ever seen people in Italy making pizza using pre-cooked dough?
