There’s something pretty special about unexpectedly walking into a shop hundreds of kilometres from home and seeing your coffee sitting on the shelf.

On the drive home from Fine Food Australia, we pulled into Gundagai and decided to surprise one of our stockists, Marshall’s Mercantile.

They had no idea we were coming.

It was such a good reminder that Walcha Coffee is travelling far beyond Walcha now, carried into beautiful independent shops by people who believe in good products, good stories and supporting regional businesses.

And Marshall’s Mercantile is exactly that sort of place. Full of interesting products, thoughtful gifts and plenty to discover. Emily and Jazz even managed to sort out some Father’s Day shopping while we were there.

To every café, supermarket and independent retailer that puts Walcha Coffee on the shelf: thank you. We never take it for granted.

A great palate is one thing. A palate that has been professionally tested, calibrated and trusted at the highest levels of coffee for decades is something else entirely.

Shaz is a Q Grader.

For those outside the coffee industry, that little title carries a lot of weight. Q Graders are trained to assess coffee with remarkable precision — identifying flavour, aroma, acidity, sweetness, body, balance and defects, and doing it against internationally recognised standards.

It is demanding sensory work, and maintaining that level of calibration over a career takes enormous skill.

Shaz has been doing it for longer than many people working in coffee today have been in the industry.

And we get to have that palate at Walcha Coffee.

She tastes our coffees. She questions things. She notices what the rest of us can miss. She pushes us when something could be better and helps us understand why. Her experience has genuinely shaped the coffee we roast and the standards we set for ourselves.

But Shaz’s impact on us goes well beyond what she can taste in a cup.

She is extraordinarily generous with what she knows. She encourages people, gives her time freely, listens deeply and has a way of making the people around her better. There is a kindness and humility about her that means her experience never feels intimidating. It feels shared.

Awards are wonderful. Equipment matters. Good green coffee matters.

But having someone with Shaz’s depth of sensory experience sitting at the table with us is incredibly difficult to put a value on.

And having someone of her character beside us matters just as much.

She’s one of our owners, one of the people helping shape where Walcha Coffee goes next, and very much our secret weapon.

We’re enormously proud to have her on our team.

There’s a lot that goes into serving hundreds of coffees at Fine Food Australia, and one thing you absolutely need is milk you can rely on.

For our time in Melbourne, we had the privilege of using Riverina Fresh, and it was exceptional.

Consistent, creamy, easy to work with and beautifully suited to our coffee, it performed exactly the way we needed it to through some seriously busy days on the stand.

Riverina Fresh is a 100% Australian-owned dairy business based in Wagga Wagga, producing dairy in the Riverina since 1922. Their milk is sourced from farmers in the Riverina region and has built a strong reputation specifically within the Australian coffee industry.

It isn’t the milk we normally use simply because Riverina Fresh isn’t readily available in our part of NSW, but while we were in Victoria it was a very good fit for Walcha Coffee.

And the milk was only half the story.

The team at Riverina Fresh were outstanding. They stepped in at very short notice, generously sponsored the milk we needed for the show, and were professional, responsive and genuinely great people to work with.

When you’re making coffee for hundreds of people a day, consistency matters. Riverina Fresh delivered it cup after cup.

A massive thank you to the Riverina Fresh team for backing a small regional coffee company from Walcha and helping us put our best coffee forward at Fine Food Australia.

Some people leave their mark on a business through a title, a role or a job description.

Nathan’s impact has never worked like that.

For years, he’s been there quietly in the background. Asking the questions I needed to be asked. Challenging ideas. Helping me think deeper. Travelling with me, preparing for events, talking through decisions and sometimes simply being the steady voice when things felt uncertain.

This week in Melbourne gave me the chance to actually stand back and watch him for a few days. The way he notices things. The way he serves. The way he thinks. The way he makes the people and situations around him better without needing any recognition for it.

That was a privilege.

Walcha Coffee carries a lot of Nathan in what it is today.

And as I look at where we’re trying to take this little coffee company from Walcha, I know his influence will be there in what comes next too.

Some contributions are impossible to measure.

This is one of them.

Good vibes under pressure.

Fine Food has been incredibly busy, and our little team has been working flat out.

Jazz and Emily have been on the espresso machine, pretty much single-handedly turning out around 700 coffees while still making sure the quality stays where it should be.

At the same time, Shaz and Nathan have been holding down the batch brew, pouring hundreds of cups of genuinely high-quality coffee and handing out hundreds of sample bags every day.

It would be easy in that sort of pressure for things to become rushed, tense or purely about getting through the queue.

But one of the things I’ve loved watching is the attitude of our team. They’re tired, they’re working hard, and the crowds just keep coming, but there’s still laughter, encouragement and a real desire to give every person a great experience.

That matters to us.

Good coffee is important. But good coffee served by good people, under pressure, while still caring about the person standing in front of you… that’s the kind of business we want Walcha Coffee to be.

Very proud of this crew.

We didn’t come to Fine Food Australia with coffee alone.

You don’t expect a little coffee roastery from Walcha to draw a line like this in the middle of Melbourne.

Hundreds of people, lining up for a cup of coffee roasted back home in our little town.

Buyers, producers, chefs, makers, business owners and people who simply love good food and good coffee.

And every cup starts a long way from here, back home in Walcha.

A small country town in the New England High Country. Cold mornings, wide paddocks, familiar faces, and a little roastery where we roast every batch ourselves.

To bring a piece of Walcha all the way to Fine Food Australia and see hundreds of people lining up to taste it is hard to put into words.

For a few minutes, we get to be part of their day. We get to hand them something made carefully back home and hopefully give them a small moment to stop in the middle of a very busy expo.

It’s easy to think we’re just making coffee.

But coffee has always been about people, place and connection.

The conversations. The introductions. The familiar faces coming back for another cup. The strangers who leave knowing a little more about Walcha and the people behind their coffee.

What a privilege it is to caffeinate the people of Fine Food Australia.

From our little town to this very big room.

I caught up with Tim from Quincy Jones Jelly Preserves, just across the Murray in Moama, to talk about Fine Food Australia, regional producers and why there’s plenty for us to be proud of.

Good food. Great products. People having a crack and building something worth sharing.

Events like this are a reminder of just how much quality is being produced in regional Australia.

Day two at Fine Food Australia and the best part has been the people.

So many familiar faces, plenty of new ones, great conversations and a whole lot of coffee being poured.

Shaz and I have loved seeing people come by, try Walcha Coffee and hear a little more about what we’re doing back home in regional NSW.
