Introducing our DUBAI CHOCOLATE BROWNIE! 💚🍫

Think rich, chewy chocolate brownie, loaded with that famous Dubai-style pistachio crunch filling, topped with a layer of chocolate and a generous sprinkle of crushed pistachios.

The layers. The crunch. The chocolate. 🤤

Apparently there’s a communication breakdown between our machine and the payment system, and neither party seems interested in sorting out their differences! 🤣

So we’re CASH ONLY for right now, with absolutely no idea how long this little lovers’ quarrel will last but usually not long…

🩷 MEET THE WOMEN BEHIND THE MADNESS! 🧁👩‍🍳

You know that cake cabinet everyone keeps talking about? The one that seems to have something new in it every time you walk through the door?

Well, these two are the magic behind it all! ✨

👑 First up, our Pastry Queen, Roz!

By now, I think everyone knows Roz. Her passion, her drive, her dedication and the ridiculous amount of love she pours into everything she creates.

For Roz, this has never been just a job. It’s so much more than that. She goes above and beyond, constantly coming up with the craziest ideas that even have ME saying, “WHY?! Why do you do this to yourself?!” 🤣

And somehow, she pulls them off!

🩷 And then there’s our beautiful Sarah!

Sarah hasn’t been with us all that long, but you honestly wouldn’t know it. She walked into our little world and slotted in so effortlessly, it’s like she’s been here forever.

She very quickly became part of the family, although I’m not entirely sure she realised what kind of chaos she’d signed herself up for! 😂

Together, these two are the method behind the madness that is our cake cabinet.

And trust me, it’s not always sunshine and perfectly iced vanilla slices! There’s been plenty of experimenting, a few spectacular flops and moments where things haven’t quite gone to plan. But that’s all part of the fun, and we wouldn’t have it any other way! 🤣

Behind that cabinet are early mornings, endless baking, creativity, hard work and a whole lot of passion.

And while our customers see the beautiful finished products, I get to see everything that goes on behind the scenes to make it happen.

Roz and Sarah, I hope you both know just how appreciated you are. Not just for what you create, but for the people you are and what you bring to our little Vacy family. 🩷

We genuinely couldn’t do what we do without you both.

Some people get excited over a sunrise. Me? Give me a 4am start and an empty cake cabinet to fill. 😂🩷

20 years in cafés and I STILL get the same satisfaction from filling a cake cabinet. I don’t know what it is, but watching those shelves go from empty to absolutely chockers just lights me up. 🤣

But never in my wildest dreams did I think our little cake cabinet would become what it has today.

We’re certainly no commercial bakery, but bloody hell, you’d think we were running one some days! 😂

The amount of goodness that comes out of our kitchen is something else. Between me throwing ridiculous ideas at our bakers and them rocking up with a “Sooo, I’ve got an idea of what I’m making today…” (which usually means I’m about to lose another section of fridge space 🤣), the creativity never stops.

Throw in our bought-in favourites that we simply cannot part with, and somehow we’ve created a cake cabinet that’s become one of the biggest reasons people travel out to our little store.

And the best part? You never quite know what you’re going to find in there from one day to the next.

Well, except for ONE thing.

THE VANILLA SLICES. 👑

Those bad boys have practically claimed squatter’s rights. An entire shelf dedicated to them, and quite frankly, I don’t think they’d accept anything less. 😂

It’s a little bit crazy, a whole lot of sugar, and something we are ridiculously proud of 🤎

Today’s mail has been sorted and we’re about one parcel away from needing to climb over boxes to get out of the parcel room! 🤣

If you’ve received a collection notification, we’d really appreciate you popping in to grab your parcels as soon as you can! 🙏

The end-of-year parcel madness is only just beginning, and we’re already running out of room to move! 😅📦

A LITTLE BIT OF EVERYTHING, A WHOLE LOT OF VACY! 🩷

Another week of good food, good coffee, familiar faces, new faces and a whole lot of delicious chaos at our little country store! 🤪

The coffee’s been flowing, the food’s been flying out of the kitchen and the cake cabinet continues to have absolutely ZERO respect for anyone’s willpower. Come in for a coffee, leave with three things you didn’t come for. We’re not sorry! 😂

🎶 The 90s playlist? Absolutely BANGING all weekend! And as always, the staff were having just as much fun as everyone else. A little singing, a little dancing around each other and plenty of laughs in between the chaos!

Our kitchen has been pumping out big brekkies, loaded burgers, kids’ birthday catering, bridal party catering and beautiful fresh fruit boxes. The girls have been busy!

🏏 Cricket kicked back into full swing on Saturday, which apparently also means vanilla slice season for the parents! Funny how many suddenly need to duck into the shop while the kids are playing! 😂

Speaking of vanilla slices… our Maple Blondie Vanilla Slice was an absolute HIT! 🤤

Our Vacy Cold Cans have been getting plenty of love, and here’s a little reminder… those delicious Drunken Sailor sauces and relishes we use in our meals? Yep, you can take them home too! Along with all the quirky gifts, gourmet goodies and treasures filling our giftware shelves. 🛍️

But amongst all the food, coffee, cakes and organised chaos, our favourite part is still the people. The regulars who feel like family, the newcomers discovering us and all the friendly faces popping in for a chat.

Not bad for a little country general store, hey? 🩷

Here’s to another week of full plates, good coffee, 90s throwbacks and plenty of laughs!

🎄🏠 A LITTLE CHRISTMAS MAGIC, STRAIGHT FROM OUR PASTRY QUEEN’S HANDS… ✨

Ever wondered why gingerbread houses are such a big part of Christmas? Because there’s actually a beautiful little tradition behind them. ❤️

It all dates back to Germany, where gingerbread has been baked for centuries. But it was the famous fairy tale Hansel & Gretel, published by the Brothers Grimm in 1812, that helped bring the idea of magical little houses covered in sweets to life.

Over time, these edible cottages became part of Christmas traditions, decorated with icing, lollies and snowy rooftops. Families would gather to create them, gift them and display them as little pieces of Christmas magic. ✨

And now, a couple of hundred years later, our very own Pastry Queen Roz has decided to bring a little of that magic to Vacy! 🥹

And would you LOOK at what she’s created?! 😍

Every little gingerbread house is lovingly baked, assembled and decorated BY HAND. From the tiny piped details and lolly-covered walls to the snowy rooftops, little presents and beautiful Christmas wrapping.

No two will be quite the same, and every single one takes hours of patience, creativity and a whole lot of love.

These aren’t just gingerbread houses. They’re edible Christmas centrepieces, beautiful gifts and little memories waiting to be made. ❤️

And this, ladies and gentlemen, is exactly why we LOVE her! 😂

Yesterday I handed our very own experimental pastry queen Sarah some packets of Nerds, some bubblegum syrup and condensed milk and basically said… GO TO TOWN! 🤪

WELL. THIS IS WHAT HAPPENED. 👀💗

The thing about Sarah is, you can throw absolutely ANY idea her way and she’ll give it a crack. No flavour too weird, no combination too questionable, even when Harley finds something on TikTok that he’d love to eat! 😂

And I absolutely LOVE that our girls have the creative freedom to dream up and trial their own ideas. It’s what makes our cake cabinet a little different every week. A whole lot of creativity, plenty of experimenting and occasionally a sprinkle of WHAT THE HELL HAVE WE CREATED?! 🤣

Now, back to this pink monstrosity of deliciousness… 🌈

Sweet, tangy, crunchy, chewy, bubblegummy MADNESS!

The sensation in your mouth is honestly a WHOLE EXPERIENCE. 🤯🍬 I don’t even know how to explain it. You just have to try it!

Sarah, you absolute mad scientist! 🧪👩‍🍳 Never stop doing your thing, because this is exactly the kind of crazy we love coming out of our kitchen!
