I wish I timelapsed this kid working the coffee machine with me today. ☕❤️

The funny thing is… I dont have to ask him to come to work.

He asks me.

This morning he was up before the sun, asking if he could jump on shift with me. And from the moment we opened until the afternoon, he didn’t stop.

He knows the till.
He knows how to run espresso shots and watch the extraction times.
He can make our cold coffee cans.
He ran orders.
Called out names.
Helped customers.
Ticked jobs off the checklist without being asked.
And if there was something to do, he’d already found it!

Watching him take so much pride in every little job honestly makes me so proud.

No one expects a kid his age to be doing what he does, but he shows up because he genuinely wants to learn. You can’t teach that kind of work ethic.

Today was another one of those crazy, all-hands-on-deck days, and alongside our incredible team, our little apprentice absolutely held his own. Every single one of the team should be proud of what they achieved today.

The first week of the school holidays is officially done and dusted… and tomorrow we’re back at it from 6:00am (with an empty cake cabinet 🫠)

And yes… before anyone asks…

He’s already requested another shift.

Apparently he’s put himself on the roster now. ☕😂❤️

Some ideas really should stay inside our heads…

This wasn’t one of them. 🤭

If you know me, you’ll know I have one drink order that I go back to every single morning. Every. Single. Morning.

And there’s only one other person in this town who loves it just as much as I do 😉

Today, somewhere between coffee, cake, and “what if…”, the light bulb went off between us.

What if we turned our favourite drink into our next vanilla slice? She asked. And of course I said it was a no brainer to pull it off.

So… we did.

It’s landing in the cabinet at 7:00am tomorrow, and I genuinely think this one has the potential to become a signature flavour.

Now the question is…

OH MY GOD… I DIED AND WENT TO HEAVEN WHEN I TASTED THIS.” 🤤☕️

Yep… that was the reaction.

You already love our Peaberrys coffee.

You already love our vanilla slices.

So naturally we asked ourselves… why not put the two together?

Introducing today’s newest flavour…

🤎 Espresso Vanilla Slice 🤎

Flaky golden pastry.
The vanilla custard you already know and love.
A layer of silky vanilla cream.
Finished with a rich espresso icing that ties the whole thing together.

We actually did an espresso version once before as a one-off, but yesterday we took it up another notch… and safe to say, this one might just be our favourite yet.

🚧 A little heads up for tomorrow…

Tomorrow we’ll be closing at 4:00pm, and we won’t be trading tomorrow night.

Now before anyone panics… nothing’s wrong. In fact, it’s quite the opposite.

Over the past eight months, one thing we’ve heard on the occasion is, “You need another coffee machine!”

Truth be told, our machine is an absolute weapon. It keeps up with the demand without missing a beat. But what it can’t fix is the fact that our little coffee corner has officially become a victim of its own success.

Week after week, we’re flying through bag after bag of coffee beans, pouring coffee after coffee, filling can after can, and even sending bags of our beans home with many of you for your own coffee machines. (yes, you can take a bag home too because we stock the beans we use along with our syrups, chocolate powder and chair powder😉)

It’s honestly something we never could have imagined when we first made the change.

So… it’s time to shake things up.

So tomorrow afternoon, the tools are coming out, things are getting pulled apart, and another one of our famous overnight missions begins. 😅

We’re keeping the final result under wraps for now, but we promise it’ll all be worth it for our growth.

Thank you for your patience while we continue growing alongside this incredible community. Every coffee you buy, every bean you take home, every recommendation you make to a friend… it’s what’s made moments like this possible.

🚨 THIS IS YOUR WARNING. 🚨

⚠️ PSA: When I say get in early… I mean GET. IN. EARLY.

Tomorrow morning, 140 vanilla slices hit the cabinet…

And that’s it.

So consider this your official warning. 😂

Please don’t roll in at lunchtime, stare at the empty cabinet and ask,

“Any chance you’ve got a vanilla slice left?”

Because, my friends… the answer will almost certainly be no. 😅

This week you lot absolutely did us a solid. You blew last week’s numbers out of the water, and honestly… we’ve hit baking capacity.

As much as we’d love to pump out 200, 300 or even 400 vanilla slices a day, we’re not a commercial bakery with giant mixers and conveyor ovens. We’ve got one kitchen, one mixer, one oven, one incredibly talented pastry chef turning out tray after tray by hand… and this weekend, our apprentice pastry chef has taken one for the team and jumped in to bake as well. 💪

One of the girls got asked today, “Why don’t you just buy more in?”

The answer is simple… because we don’t buy them in.

Every single vanilla slice is made right here, in-house, by our team. That’s exactly why they taste the way they do, and it’s exactly why so many of you keep coming back for them. We can’t just order another box or magically whip up another hundred while we’re flat out serving a café full of customers. Once today’s baking is done… that’s the day’s baking.

It really is a team effort, and every vanilla slice that lands in that cabinet is there because of a whole lot of skill, hard work and some very early mornings.

Meanwhile, Roz has absolutely earned every second of her weekend before Monday rolls around and she’s back at it again. And as for me… let’s just say the last two days have well and truly cooked me. 😂☕️

So if a vanilla slice has your name on it tomorrow…

Well… you guys certainly had us laughing! 😂

Some of your guesses were wild. Some were surprisingly close. And some of you clearly forgot that we’re still just a little country general store… not a full-scale bakery! 🤣

The official number of Vanilla Slices we sold last week was…

🥁 640! 🤯

To put that into perspective, we’ve been averaging around 500 slices a week… and that’s still with us selling out most mornings.

So how did we jump to 640?

Well… you cheeky lot started calling ahead and pre-ordering them! 😂 Which meant a whole lot more trays heading into the cabinet last week (🫠if anyone happens to know a passionate pastry chef who’d love to be part of this crazy little team… send them our way. Asking for… well… us. 😉)

Now… the moment you’ve all been waiting for…

Okay… let’s stop pretending this isn’t the star of the show. 😂

Who would’ve thought that a humble old-school vanilla slice… of all things… would be what put our little country general store on the map?

Not a fancy dessert.
Not a crazy food trend.
Just a proper vanilla slice.

Except… it’s not just a vanilla slice.

It’s flaky pastry that shatters everywhere.
It’s custard so smooth people tell us they’d happily eat it with a spoon.
It’s tray after tray after tray being baked all week long… and somehow we’re still selling out.

The funny part?

It was never really about the vanilla slice.

It was about creating something we’d be proud to put our name on. Tweaking recipes. Testing. Taste testing (don’t worry… this one was my taste tester 😉). Caring about every single tray that comes out of the kitchen and refusing to settle for “good enough.”

Then somewhere along the way… you all became part of the story.

You’ve watched this little store grow through our socials.
You’ve celebrated the wins with us.
You’ve watched us run out of stock when we genuinely thought we’d overprepared.
You’ve watched us juggle what can only be described as organised chaos… because honestly, that’s exactly what it is.

Somehow, in a kitchen that never feels quite big enough, with a team that genuinely loves what they do, we keep pulling it off. We laugh, we hustle, we keep the caffeine flowing, and somehow we make it happen.

And I think that’s what people really connect with.

You can feel it through a screen…
Then you walk through the doors and realise it’s exactly the same in real life.

The laughter.
The energy.
The chaos.
The passion.
