Grilled Cypriot Halloumi w/ Local Citrus & Paxton Marmalade + Rieslingfreak - No. 4 (South Australia)

Eden Valley Rieslings are world-famous for being bone-dry, laser-focused, and packed with electric, mouth-watering lime and citrus acidity.

That piercing acidity cuts straight through the rich, salty density of the halloumi like a knife. Meanwhile, its intense lime aromatics will marry beautifully with the local citrus and sweet marmalade on the plate.

We choose a vibrant chermoula dressing over traditional chimichurri because its fresh lemon juice base perfectly elevates the natural sweetness of the octopus, rather than masking it like a sharp, vinegar-based counterpart.
