Cavatappi is an Italian word that means “corkscrews”. It’s a shape of pasta that came about by accident at the Barilla pasta company in Italy when pasta dies were mistakenly made with a spiral, instead of straight. We love it as it’s a chewy, textured pasta.
Tonight’s it’s on the menu with caramelised onion, radicchio, Gorgonzola and walnuts.
