Can we make boiler hens taste good enough to go on the menu?

At the screening of the samesyn 2.0 documentary, we were asked during the Q&A if we ever make dishes that don’t work out?

The answer is yes, plenty of ideas never make the menu, but we are hoping that this idea will eventually work out… we have been trying for a few weeks now to make boiler hens into a dish for the menu… watch this space.

Fremantle Octopus, grilled kohlrabi, spent citrus kosho, smoked garlic and beach herbs.

Acidity is one of the most important building blocks in developing a dish. We use loads of citrus juice for sharpening sauces, purées and other components. What to do with the remaining part of the fruit? CITRUS KOSHO!

Citrus kosho is a fermentation of the remaining citrus (post juice extraction) chilli and salt. The result is a delightfully complex, tangy condiment perfectly matched with grilled octopus.

What to do with sourdough starter surplus?

Our sourdough starter needs constant love and feeding…
Our passionate baker extraordinaire Jonte Rolf Carlson cares for his little baby, but she doesn’t eat all her food at feeding times so we are constantly on the lookout for ways to use the sourdough starter discard.

Here the surplus is transformed into a delightful lavosh style cracker to accompany fresh sardines, fennel, radish and homemade cultured cream.

On the snack menu now!
