Tracking and measuring variables is absolutely essential to making the best cup of coffee every single time.
1. The first variable is our dose. This is the amount of ground coffee in grams that will be used in the filter basket.
2. The second variable is our yield. This is how much liquid coffee in grams we have after we have poured the shot.
3. The third variable is the extraction time. This is how long the coffee takes to pour to our desired yield weight.
Each of these variables are dialled in before the first coffee of the day is sold. This means we know that we are making the best possible cup, consistently, from the first brew sold.
