Puglia is the heel of Italy. Olive groves a thousand years old, a coastline that doesn’t end, and food born of farmers, shepherds and fishermen who never had much and made the best of everything.
All June, our kitchen is cooking through it.
Panzerottini fried until pillowy, stuffed with melting mozzarella. Orecchiette with cime di rapa, anchovy, and sausage braised in Primitivo. Bombette di Martina Franca, pork rolled around pecorino, Capocollo and caciocavallo. Mustazzoli al cioccolato finished with vincotto.
Four dishes. One sun soaked region. All June at 304 King St, Newtown.
