Ever wonder why matcha is so vibrantly green? 🍵✨

It all comes down to the shade. Traditionally, for about 20 to 30 days before harvest, the tea plants (destined to become Tencha leaves) are carefully covered to block out direct sunlight.

This quiet resting period gently forces the plant to overproduce chlorophyll (creating that beautiful electric green) and preserves the L-theanine—the amino acid responsible for calm, jitter-free energy and sweet umami flavor.

If the leaves are exposed to too much sun, those sweet amino acids can turn bitter. Shading is a true labor of love, but respecting the craft makes all the difference in your cup.

The second chapter of Chubby Cubby Cafe!

Our flagship store is finally coming together as we have been working on this project for over 8 months. We signed the contract last November and expected it to be ready by March or April this year, but things don’t always work out the way we want, and that’s okay!🥹

When our Haymarket branch closed, we were heartbroken and devastated, but Westfield came in at the right time, so we are super grateful for the opportunity!🤍

We have put so much effort into this new space with bigger goals and bigger spaces. Our new location will have more variety of drinks, brunch options, more pastries and cakes!! We can’t wait to bring you all to a bigger chapter of Chubby Cubby Cafe!

In this new chapter of ours, we hope to bring something new and special for you all! We can’t wait to show you what we have been working on! Stay tuned for the opening date🥹🤍
