1. Mediterranean Orzo Pasta Salad 🇬🇷
Serves: 4–6
Ingredients
300g orzo pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, finely diced
½ cup Kalamata olives, sliced
150g feta cheese, crumbled
¼ cup fresh basil, chopped
Dressing
4 tbsp extra virgin olive oil
2 tbsp lemon juice
1 tsp dried oregano
Salt and black pepper to taste
Method
Cook orzo according to package instructions. Drain and cool.
Combine tomatoes, cucumber, onion, olives, feta, and basil in a large bowl.
Add cooled orzo.
Whisk dressing ingredients together.
Pour over salad and toss gently.
Refrigerate for 30 minutes before serving.
2. Italian Pesto Pasta Salad 🇮🇹
Serves: 4–6
Ingredients
300g fusilli pasta
½ cup basil pesto
1 cup cherry tomatoes, halved
150g mozzarella balls
¼ cup sun-dried tomatoes, sliced
2 tbsp pine nuts, toasted
Fresh basil leaves
Dressing
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
Method
Cook fusilli until al dente. Drain and cool.
In a large bowl, combine pasta and pesto.
Add tomatoes, mozzarella, sun-dried tomatoes, and pine nuts.
Mix gently until evenly coated.
Season with salt and pepper.
Garnish with fresh basil and serve chilled.

Chef Zouheir Lasagna Collection.
1. Classic Beef Lasagna
Ingredients
500 g beef mince
1 onion, diced
2 garlic cloves, minced
800 g crushed tomatoes
2 tbsp tomato paste
1 tsp oregano
1 tsp basil
12 lasagna sheets
500 ml béchamel sauce
300 g mozzarella
100 g Parmesan
Salt and pepper
Method
Sauté onion and garlic in olive oil.
Add beef and brown well.
Add tomatoes, paste, herbs, salt and pepper.
Simmer 30 minutes.
Layer meat sauce, lasagna sheets, béchamel and cheese.
Repeat layers.
Top with remaining cheese.
Bake at 180°C for 45 minutes.
2. Chicken Alfredo Lasagna
Ingredients
500 g cooked chicken, shredded
500 ml Alfredo sauce
250 g mozzarella
100 g Parmesan
12 lasagna sheets
200 g mushrooms, sliced
2 tbsp parsley
Method
Mix chicken with Alfredo sauce.
Layer lasagna sheets, chicken mixture, mushrooms and cheese.
Repeat layers.
Finish with cheese.
Bake at 180°C for 40 minutes.
3. Vegetable Lasagna
Ingredients
2 zucchini, sliced
1 eggplant, sliced
2 capsicums, diced
2 carrots, grated
700 g tomato sauce
12 lasagna sheets
300 g mozzarella
250 g ricotta
Salt and pepper
Method
Roast vegetables for 20 minutes.
Mix ricotta with seasoning.
Layer sauce, pasta, vegetables, ricotta and mozzarella.
Repeat layers.
Bake at 180°C for 45 minutes.
4. Seafood Lasagna
Ingredients
300 g prawns
300 g fish fillets, diced
200 g scallops
500 ml béchamel sauce
12 lasagna sheets
250 g mozzarella
1 tbsp dill
Salt and pepper
Method
Cook seafood lightly in olive oil.
Mix seafood with béchamel and dill.
Layer pasta and seafood mixture.
Add cheese between layers.
Bake at 180°C for 40 minutes.

Ingredients

For the Crispy Flatbread:

* 2 flatbreads or naan breads
* 2 tbsp olive oil
* 1/2 tsp sea salt

For the Whipped Brie:

* 6 oz brie cheese, rind removed
* 4 oz cream cheese, softened
* 2 tbsp heavy cream
* 1 tsp honey

For the Roasted Strawberries:

* 2 cups strawberries, halved
* 1 tbsp honey
* 1 tsp balsamic vinegar

For the Balsamic Glaze & Pistachio Crunch:

* 2 tbsp balsamic glaze
* 1/3 cup pistachios, roughly chopped and toasted

For Garnish (optional):

* Fresh basil leaves
* Cracked black pepper

Directions

1. Preheat oven to 400°F (200°C).
2. Toss strawberries with honey and balsamic vinegar.
3. Spread on a baking sheet and roast for 15 minutes until soft and caramelized.
4. Brush flatbreads with olive oil and sprinkle with sea salt.
5. Bake for 8–10 minutes until golden and crisp.
6. Blend brie, cream cheese, heavy cream, and honey until smooth and fluffy.
7. Spread whipped brie evenly over the warm flatbreads.
8. Top with roasted strawberries.
9. Drizzle with balsamic glaze.
10. Sprinkle generously with toasted pistachios.
11. Garnish with fresh basil leaves and cracked black pepper.
12. Slice and serve immediately.

Mixed Berry Salad

Ingredients (Serves 4)
For the Salad
1 large romaine lettuce, chopped
2 cups mixed salad greens
1 cup strawberries, sliced
1 cup blueberries
1 cup raspberries
1 cup blackberries
½ cup toasted almonds, roughly chopped
¼ cup dried cranberries (optional)
100 g goat cheese or feta cheese, crumbled (optional)
For the Berry Vinaigrette
3 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp honey
1 tsp Dijon mustard
1 tbsp raspberry or strawberry jam
Salt, to taste
Freshly ground black pepper, to taste
Method
Wash and dry all lettuce and berries thoroughly.
In a large salad bowl, combine romaine lettuce and mixed greens.
Add strawberries, blueberries, raspberries, and blackberries.
Sprinkle toasted almonds and dried cranberries over the salad.
Add crumbled goat cheese or feta if using.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, berry jam, salt, and pepper until smooth.
Drizzle the dressing over the salad just before serving.
Toss gently to coat all ingredients evenly.
Serve immediately while fresh and crisp.
Chef's Tips
Toast the almonds for 3–4 minutes to enhance their flavor.
Add grilled chicken for a complete meal.

Nepali Momo (Basic Recipe)
Ingredients
500 g minced chicken, buffalo, or vegetables
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp ginger, minced
2 tbsp coriander, chopped
Salt and black pepper to taste
1 tbsp soy sauce
30–40 momo wrappers
Method
Mix meat (or vegetables) with onion, garlic, ginger, coriander, soy sauce, salt, and pepper.
Place a spoonful of filling in each wrapper.
Fold and pleat the edges to seal.
Steam in a momo steamer for 10–12 minutes until cooked through.
Serve hot with spicy tomato-sesame momo chutney.
Chef Zouheir's Tip:
For authentic Nepali flavor, add a little sesame oil and serve with traditional Jhol Achar (spicy tomato and sesame dipping sauce).
