Spring has sprung here in Marrickville.

The mornings are starting to be a little less nippy, and the sun is rising earlier every day. A welcome change for us and our 6am regulars.

And most importantly, the coffee keeps flowing.

Regulars aren't a system, they're attention, paid consistently, over months and years, until it stops needing to be asked.

No POS remembers a flat white with one sugar and a quiet nod good morning. A person does.

The bar opens the door. The order remembers the person. The routine becomes the relationship.

Coffee and the concept of “volatility” walk hand in hand. Handling this is part of our job as baristas and roasters.

The key problem to solve for consistently high quality is variables and experience. Detecting and understanding the deviations that show up in our measurements and sensory testing, and knowing how to correct for them.

This is what we do every day. At the cupping table, behind the bar, at the roasting bench.

Every shift starts before the doors do. Grind size, dose, extraction time. Dialled in and tasted before a single customer walks through.

A recipe doesn't pull the shot, it's a starting point. Checked and adjusted as the morning goes on, cup after cup.

The bar sets the standard. The first taste confirms it. Five hours of service proves it.

Every roast is guided by real-time information. The four screens give our roaster the data they need-from temperature and airflow to timing and rate of rise-all overlaid against reference curves.

But the screens don’t roast the coffee. They provide the insight needed to make precise adjustments and consistently replicate the profiles we prefer.

Technology provides the data. Relentless tasting gives us direction. Experience makes it repeatable.
