The Essentials
The secret to a great Pad Thai isn't just the ingredients; it's the balance of the sauce and the high-heat stir-frying technique.
1. The Sauce (The Soul of the Dish)
Mix these together beforehand so you aren't scrambling while the pan is hot:
• 3 tbsp Tamarind paste (concentrate)
• 3 tbsp Brown sugar or palm sugar
• 2 tbsp Fish sauce (or soy sauce for a vegetarian twist)
• 1 tsp Sriracha or chili flakes (adjust to your heat preference)
2. Main Ingredients
• 125g Dried flat rice noodles (soaked in lukewarm water for 30 mins until flexible but firm)
• 200g Protein (shrimp, sliced chicken, or extra-firm tofu)
• 2 Large eggs
• 1 cup Fresh bean sprouts
• 3 Garlic cloves, minced
• 2 tbsp Neutral oil (like vegetable or peanut oil)

Step-by-Step Instructions
