EL CORAZÓN Lleno! ❤️‍🔥

Full hearted after this intimate evening of food, agave, stories and connection, bringing together our Maiz team, our guests and Esteban Morales for a very special 1-on-1 tasting experience.

A specially curated menu, cocktails created around the same philosophy of transformation, and six agaves shared and tasted alongside the man behind one of Mexico’s most exciting spirits.

But more than anything, it was a night about community.

Life is built in community and around the people we share it with. And when good people come together, great things happen.

This night was a reflection of the talent, creativity and care of the Maiz team, together with the knowledge, patience and hard work of the Mexican producers who dedicate themselves to the land and to agave.

We’re incredibly proud of our team and of the collaborations we’ve built along the way that make nights like this possible.

THE FULL MENU REVEAL. 🌵🌽 NOTHING GETS WASTED

We were asked to create a menu inspired by the journey of agave….. So we turned that journey into an experience.

The concept lead by Chef Monica Monica Yepes, our team’s four-course menu follows four stages of transformation:

TIERRA · EARTH
Chochoyotes. Jerusalem artichoke, pumpkin, mushrooms and seeds.

FERMENTACIÓN · FERMENTATION
Tepache Aguachile. Fermented pineapple, mandarin and chilli kosho, shaped around the piña of the agave.

FUEGO · FIRE
Tlacoyo Tampiqueña. Wagyu cooked over coals, corn tlacoyo, beans and nopales.

BAGAZO · WHAT REMAINS
Blood Orange Tres Leches. Spent almond from othe almond rompope given another life as the final course.

Nothing ends. Everything transforms.

The same philosophy continues at the bar, where Arnaud Arnaud Doxins and the team have created a cocktail program exploring how far we can take each ingredient by using, reusing and transforming every part possible.

And throughout the night, Esteban Morales joins us all the way from Mexico to guide us personally through six agave spirits and the story behind Bagazo Tequila Tequila El Bagazo

For one night only, we’re bringing Mexico a little closer to Sydney.

On Wednesday 2 September, we welcome Mexican agave producer Esteban Morales to Maíz, the maker behind El Bagazo Tequila El Bagazo, La Venenosa La Venenosa and Derrumbes Mezcal Derrumbes for an intimate night of food, agave and the stories behind the spirits.

The occasion also marks the Sydney launch of El Bagazo Tequila, Esteban’s newest project, built around one radical idea:
Nothing gets wasted.

Together with our friends Agave Lux Australia, we’re taking that philosophy beyond the bottle and into the Maíz kitchen and bar for one night.

Shiitake Tequila Old Fashion-ish 🥃

Some flavour combinations don’t make sense... until they do.

Created by our Bar Supervisor, , this is his take on an Old Fashioned through the lens of unexpected pairings that challenge what we think belongs together.

Tequila infused with shiitake and vanilla, stirred with smoked syrup and mole bitters.

Earthy. Smoky. Silky. Unexpected.

A cocktail inspired by the slower pace of winter and the curiosity to keep pushing flavours beyond what you’d expect.

It’s quickly become one of the most talked-about drinks on our new menu.
