The humblest thing in the kitchen, heroed over fire. Charred cabbage, tabil tahini, molasses dressing roasted macadamia. A new addition to the Adam Wolfer’s Aalia menu. The next chapter is nearly here.

From the beginning, Aalia was built on a single pursuit: the highest point. Not a place you reach, a direction you keep moving in.

This winter, the menu evolves. Executive Chef .wolfers continues the search this restaurant was founded on, for the ingredient’s others have forgotten, the regions others overlook and brings his own hand to it. Closer to the fire. Closer to the season. Lighter, fresher, and rooted more deeply in the food of the Middle East.

Before the next chapter opens, we’ll set the table one last time for the dishes that carried us here. Then we climb again 💫
