Speaking with Pepito, we asked what dish we haven’t tried before in the past 6 years. He didn’t hesitate - Adobo de Chancho. A dish renowned in the south of Peru in Arequipa, but beloved all over the Andes.

You got to keep Pepito’s happy.

Pepito’s x Porcine L’Avant Cave

As it happens, always over a few pisco sours, chatting with Chef Nik Hill about the origin of different dishes in Peru. We spoke about Nikkei (Japanese-Peruvian) and Chifa (Chinese-Peruvian), then as a joke mentioned we should do French-Peruvian. A pisco sour later the plan was drawn.

Think Pisco butter escargot, Andean Poutine, Trucha Tartare, just to name a few. Wouldn’t be a party without raw seafood and Pisco Sours of course.

When the world gives you lemons,make lemonade. When the Spanish give you hearts, make ANTICUCHOS.

Given offal as their main protein, 16th century African slaves in the Virreinato del Perú used ingenuity to make it not only nourishing but also absolutely delicious.

Our ox heart skewers are a slice of history and Peruvian street food tradition. Pepito’s in Marrickville perhaps the only place in Sydney where you can try it.
