For one night only, Biji Dining and Kolkata Social come together to explore the incredible diversity of India's regional food cultures, beyond the familiar.

This collaborative menu celebrates hyper-regional dishes, heirloom recipes, and the stories that have shaped them across generations. From the riverbanks to the hills, from the Ghats to the desert, we will be exploring the lesser-known culinary traditions from across the subcontinent, each course offers a glimpse into the flavours, techniques and ingredients that define a particular place and moment in time.

Roasted cauliflower, coconut cream, capers, caramelized onion tadka.

Cauliflower wedge brined, roasted then finished on a charcoal grill. Served on a bed of coconut cream made of coconut, curry leaf, sesame and whole grain mustard. Cauliflower dotted with caper and raisin puree and then finished off with caramelized onions & crispy shallots tadka and nasturtium leafs.
