Locally sourced produce, fine Tasmanian wines, cold beer, and warm hospitality—served in a charming rustic and welcoming atmosphere. The Bark Mill is a restored mill and museum in Swansea on Tasmania’s east coast. The mill is Australia’s only restored Black Wattle Bark Mill, and possibly the only one in the world. The fully working mill demonstrates how bark from local black wattle trees was once crushed for export across the world. The mill was established in 1885 and continued operation until the early 1960s. A visit here gives a fascinating insight into the ancient art of milling bark. The museum depicts the early history of the oldest rural municipality in Australia. Individual working displays depict life as it was in the 1800s. The descendants of the original settlers have loaned many items and photographs to the exhibition. The Bark Mill complex is opened daily. In addition to the Museum is a Tavern and Bakery making this the ideal place for a stop. The tavern and bakery cater for all meals. A large car park, good access for disabled, well appointed rest rooms and children’s playground completes the Bark Mill Tavern, Bakery and Museum complex. The Bark Mill is one hour 40 minutes’ drive (134 kilometres/84 miles) from Hobart.

MEET ADAM "PADDY" WILSON
A Belfast boy who came to Tasmania a decade ago… and just forgot to leave
Now a proud Aussie citizen, professional chef and yes… his nickname is “Paddy.” Original, we know
Adam spends his days playing with fire and knives in a somewhat professional kitchen, creating culinary chaos one sizzling pan at a time

His kitchen is basically his own beautiful identity crisis — part Irish stew, part modern Australian and 100% full of Belfast sarcasm
If you can understand his accent over the sound of a sizzling pan, you’ll get along just fine
Favourite thing about working at The Bark Mill: The kitchen camaraderie, shared laughs, music and mutual support...like a little family

Well it’s late and the photos aren’t the best…please forgive me, you get the idea, it’s been a long day 😩 Deli, great coffee, new lunch menu and your egg & bacon rolls for breakfast just to start. We will open the doors at 6am tomorrow as promised. Same great service and friendly staff. We are starting small so please let the staff know if there is something else you would like to see. I would sincerely like to thank our head chef Adam for his tireless efforts in helping me, Tracey for her work today in getting things set up and Chelsea for her endless cleaning. Of course this all wouldn’t be possible without our chief Adam Greenhill and Kerry Vincent for their faith, drive and commitment to the team and the venue, and his sidekicks for their help today. Thanks Craig Brown Builders, Jack Kelly and Nic and Ethan from Tecnic Air & Refrigeration…life savers as always. Thank you to the whole Bark Mill team for your patience and please be kind with your criticism if we don’t get it right the first time. It’s been a mammoth effort from everyone involved. Hugs and kisses from me and my shout when I see you all. Sorry if I’ve missed anyone. We are so excited to welcome our loyal customers back and hopefully some new ones.
