IT WOULDN'T BE A NEW MENU LAUNCH WITHOUT A GIVEAWAY TO CELEBRATE!

We sneakily launched a new wine bar menu this week without telling anyone...... It's one we are really proud of and can't wait for you all to try it! There's a few photos of some of the new dishes. The set menus are still here and available.

All you have to do is make a booking for next weekend 18th - 20th in the wine bar via the link in bio or on opentable, comment giveaway on your booking and well announce the winner on the 17th

AUSSIE RAREBIT, CARAMELISED LEEKS ON SOURDOUGH!

As we’re both English, Josh and I grew up eating various versions of cheese on toast. It’s a dish that evokes memories for most kids growing up in England, and we wanted to bring those memories to the menu in an Australian way.

One dish people might not be familiar with is Welsh rarebit. It’s basically cheese on toast, but with a béchamel, beer, and cheese base. I know, sounds good, right?

Josh understood the assignment and came up with this absolute umami bomb of a dish.

The rarebit is made with Coopers Ale, Maffra cheddar, and a few other things, served with a caramelised leek jam, set on top of one of Sydney’s GOAT bakeries, Pioik’s sourdough, and finished with a little Vegemite powder.

LAMB MOUSAKKA DUMPLINGS!

I’ve been thinking about how to incorporate Pauline’s Greek heritage into the wine bar menu for a while, but nothing ever quite landed or fit. I’ve also always wanted to do a take on dumpling, so that’s how this dish came together.

Turkish-style dumplings with the essence of moussaka, made with Gundagai lamb from the legends at Coppertree Farms , cooked down with all the classic flavours you’d expect, including a béchamel indide. Finished with a brown butter sauce infused with Aleppo pepper, oregano, and lemon.
Best eaten in one bite, one dumpling at a time.
Full of flavour and perfect for winter.

Halley!

Where to start with Halley! She's funny, kind, hard working and going to be very hard to replace!

Who knows how long she's actually been with us? However long it's been, it's felt like she's been around for ever.

What Pauline says!

A quick scan through Halley’s application for the waiter’s position, it was clear that she was a winner.
Four years of university waterpolo on the west coast, it was a no brainer.
Pieno needed another waterpolo player, we already had Ebony, and Lucy was still making the odd guest appearance, so Halley was a logical addition to the team. 
Remarkably, on her first shift, it turned out that she also knew quite a bit about being a waiter!
Now she’s off to law school in Boston (we expect nothing less from Halley). We’re going to miss her. Halley is funny, warm and whip smart. Perhaps off brand.
Best of luck Halley, we will definitely see you again.

TURKISH EGGS!!

According to the kind man on google today, this dish is just a bowl of fried eggs in oil...

What it actually is, is 2 free range eggs cooked in a n'duja and confit tomato butter, stracciatella cheese, pickled ecshalot, herbs and focaccia!

This dish has evolved over the years and gets better every time!

Bit of a strange one here....

Our amazing waitress and family friend .world96 happened to take a booking from a lady named Louisa who came into the restaurant today. She forgot to take a contact number or anything (might have had one too many lemonades last night).

Funny thing is, we are not actually open at 6.15 on a Tuesday.
