Saba Hako-Zushi or “Mackerel Box Sushi” is a traditional type of pressed sushi from Osaka, Japan.
Instead of hand-forming nigiri, the sushi is made in a wooden box mold called oshizushihako.
The mackerel is cured in salt then marinated in vinegar, so it’s tangy, savory, and less “fishy” than raw mackerel. The rice is also seasoned.
