This cupcake is a twist on the classic hummingbird cake. It’s a deliciously moist tropical treat blending sweet pineapple, ripe banana and coconut with warm hints of cinnamon, nutmeg and allspice. Velvet Vibes

This red velvet cupcake is my favourite. It is made with pureed beetroot and beetroot powder for the deep red colour. No food colouring here. Coconut sugar and raspberries add sweetness and the vanilla frosting tops it off perfectly. It is so moist and delicious and of course is gluten-free, dairy-free, egg-free, nut-free and vegan.😋😋😋

If you love lemon and raspberry you will love Right On Raspberry. Here are my entries for the Vegout Bakeoff:

The Showstopper - Moonbeam Mud is a white chocolate caramel slice mud cake. Made completely vegan, gluten-free and nut free this moist 4 layered cake has all the creamy sweetness of white chocolate mud with the gooey deliciousness of a caramel slice filling.

Signature Bake - Peace, Love & Pineapple combines the tropical flavours of pineapple, banana and coconut with hints of cinnamon, nutmeg and allspice and is vegan, gluten-free and nut-free and topped with a luscious pineapple frosting.

Alternative Ingredients - Velvet Vibes is an ultra-moist red velvet cupcake that’s vegan, gluten-free and nut-free. Made with pureed beetroot and raspberries and finished with a smooth vanilla frosting it delivers a beautifully balanced flavour.

The Vegout Bakeoff is only just over 3 weeks away. I’m getting a little bit excited but still nervous about sharing my creations. It has been a busy few months doing recipe development, decorating classes and trying to turn my ideas into reality, and doing lots of taste testing 🍰😋 Having only started this business late last year I did not expect to be in a competition with professional bakers! My only wish is that many people get to try my baking creations and think they are yummy.

At one of my first markets late last year a lady came up to me and showed me a picture of a large cupcake floral bouquet and asked me if I could make that for her. In my head I thought, lady, you have no idea how much of a beginner I am, and I told her I couldn’t do it. I have kept thinking about that and wondering if one day, maybe I could do something like that. So on the weekend I did an online floral cupcake workshop and I want to keep developing my skills so that one day, maybe, I can do something like the picture she showed me.
