** 1 baker:
Baker Starts (5:00 AM): Focuses on high-skill production.
• Prepare pastry, fillings, and assembly for signature pies and sausage rolls.
• Manage oven rotations to ensure fresh products are ready for early morning trade.

**1 general practice:
General Practice Starts (8:30 AM): * Initial floor check and hygiene sweep.
• Assisting Baker with dishwashing or heavy lifting if required.
• Ensuring food handling protocols are met for front-of-house displays.

Afternoon: Maintenance & Close (1:30 PM – 4:00 PM)
• Deep clean of the sandwich station after assistants depart.
• End-of-day floor scrubbing and hygiene sanitation.
• Final food safety checks and stock rotation for the following day.

* 2 sandwich preparation:
The Lunch Rush: Peak Service (11:30 AM – 1:30 PM)
• Sandwich Assistants (11:30 AM): Both assistants arrive to handle the highest volume of the day.
• Assistant 1: Customer-facing; taking orders and managing payments (utilizing English fluency).
• Assistant 2: Independent station management; high-speed sandwich assembly.
