That is Grant Madgwick. Forty years cooking. Three weeks ago he said this and we have not stopped thinking about it.

"It is who you are with. The waiter was funny. The experience, the things that happened. That is what leaves a footprint."

He grew up cooking in the 80s. Crepe Suzette finished at the table. Liqueur coffees lit in front of you. Port after dinner because nobody was rushing anywhere.

Grant thinks the theatre has gone from most restaurants. We agree. So we are putting it back.

A cocktail finished tableside in liquid nitrogen. The Trust the Chef five-course menu where Grant decides what comes out next. The long Sunday lunch where the second bottle gets ordered without anyone checking the time.

There's a particular feeling that settles over a restaurant in winter. The light goes lower, the wine gets heavier, and the conversations stretch a little longer than they should.

Grant Madgwick is already in the kitchen plotting it.

Christmas in July is returning to River House 4215 Southport Gold Coast. Last year, seven courses, one long table of strangers turned dinner companions, and a degustation that sold out before we'd properly told anyone about it. This year, Grant is rewriting the menu from scratch. Dates landing soon. And something else worth mentioning.

Also by quiet demand, we're now opening Monday, Tuesday and Wednesday nights for exclusive private bookings. A multi course degustation from Grant, designed around whatever the occasion calls for. Corporate dinners, milestone birthdays, anniversaries, secret society inductions. We don't ask.

Hello everyone, I'm Imogen, the marketing manager here at River House, and let me show you the one part you'll never see on our socials again.

The entry is hidden. A few signs, a bit of a walk, and you start to wonder if you're in the right place. You are. That's the point. The view at the end is worth it.

What most people miss is that we're three tiers. Open patio, middle level, then the dining room with the open kitchen where you watch the chefs and all the entertaining come alive.

I'm so proud of what the team achieves on the ground here, and how we get to bring that to life through our socials too.
