Before we take a break, we’ll be operating as usual for one final weekend!

This is our Vegetarian Miso Ramen 🍜

Miso ramen was built for Hokkaido's brutal winters: a rich, warming bowl to fight the cold. We built ours on a miso and konbu (kelp) dashi base instead of pork, topped with atsuage tofu and a dollop of butter for that same silky finish.

This is our Tantanmen Ramen 🌶️

Tantanmen started in Sichuan as dan dan noodles, carried on shoulder poles by street vendors, no broth, all heat. When it crossed into Japan, it softened into something creamier: sesame paste, a well-rounded tantan base, and just enough spice to warm you up without wrecking you.

Ours is topped with BBQ minced pork and bok choy. Bold, but balanced. That's the Danbo way.
