I don’t know about you, but growing up in the Philippines, I only got to taste Brazo de Mercedes on very special occasions. 🇵🇭

If it was one of the dessert options on the table, this would always be my first choice. ❤️

When I was young, I was fascinated by how something so simple could taste so special, the soft, delicate meringue, the rich custard filling, and that sweetness that just melts in your mouth.

As I got older, I noticed that Brazo de Mercedes became something I would not see anymore during celebrations. It wasn’t always on the table anymore, and somehow, that made me miss it even more.

I’m not a food expert or a pastry chef. I’m simply someone who has always loved this dessert so much that it made me want to learn how to bake it myself and eventually dream of serving it to our customers here at Mr. Edwin’s Cafe.

I’ve always wondered about its name and history, but for me, I just want to focus on the simple reason why I love it so much. It brings back memories of growing up in the Philippines and those special occasions when you would see it sitting on the dessert table. 🥹

I’ve been dreaming of making this for a while, and on my first try, I was already so happy with how it tasted. My craving was satisfied. The last time I tasted it was in 2017 or 2018, when a friend of mine had the chance to bake it. I was so fascinated that she was able to make it.

This is my second attempt, and I’m honestly so excited to share it with you. 🤍

I’m also grateful to the food vloggers and home bakers who generously share their recipes, techniques and methods online. As someone who is still learning, those videos have helped me so much.

Sometimes, you don’t need to be an expert to start.

Sometimes, you just need to love something enough to give it a try. 🇵🇭❤️

If you’ve never tried Filipino longanisa before, it’s a sweet and savoury Filipino-style sausage traditionally enjoyed with garlic rice and eggs. However, we serve ours with plain rice. ❤️

At Mr. Edwin’s Cafe, we make our own longanisa with a personal touch for our community to enjoy. It’s one of the most popular items on our menu, and people from many different cultures enjoy it too.

It’s already the “Ber” months! 🎄🇵🇭

In the Philippines, this is the time when you start seeing Christmas decorations going up in homes, shops and everywhere you go. Christmas feels different here in Australia, and honestly… sometimes we really miss the Philippines. ❤️

But as a small Filipino-owned business, we thought, if we can’t bring ourselves home, maybe we can bring a little taste of home to you. 🇵🇭

We know how busy this season can be. Most of us are working, taking care of our families, and trying to find time for Christmas shopping, cooking and cleaning.

Carrot cake has always been one of our favourites since we arrived in Australia. 🥕🍰🤎

There’s just something about a good carrot cake, soft, moist, lightly spiced, and finished with that beautiful cream cheese frosting.

We’ve had plenty of carrot cakes over the years, so trying to make one for our little café feels a little special. 😊

We started Mr. Edwin’s Cafe with Western café food, then slowly added some Filipino favourites and flavours from home. Along the way, we’ve also discovered so many things that our Australian community loves.

So this one feels like a little part of our Australian journey making its way into our kitchen. 🇵🇭🇦🇺

Trying this Almond Croissant Frangipane Cake today. 🤎

I came across the recipe and thought I’d give it a try. I love almond croissants, so I was really curious to see how those flavours would work in a cake. 🥐🍰

Still trying new recipes and enjoying the process. 😊

When we started Mr. Edwin’s Cafe, we began with the Western café food we knew and loved, then slowly added little touches of our Filipino background along the way. 🇵🇭🇦🇺

Since then, we’ve also had the privilege of discovering so many flavours and recipes through the people who walk through our doors. Some share a cake they grew up with, some recommend a recipe, and some simply tell us a story about food that reminds them of home.

I think that’s what makes running a small café so special. We’re not just bringing our food to the community. The community is also teaching us, inspiring us and becoming part of what we create.

From Western classics to Filipino favourites and everything we’re still discovering in between, we’re grateful to be creating our little menu together with the people around us. 🤎

I honestly don’t know how to say this without getting a little emotional. 😅

When we first opened dinner service, most nights we only had a few customers. But we still opened our doors, prepared the food, stayed late, paid the extra costs, and kept showing up.

Because for us, it was never just about how many people came through the door. We genuinely wanted to serve our community and give you another opportunity to enjoy Filipino food.

And lately, something beautiful started happening.

We were finally getting busy at dinner. Some nights, we were packed.

And yet… we decided to close.

I know that might not make sense from the outside.

But behind a small business are real people, limited hands, tired bodies, and a family trying to keep everything together.

We needed extra help, and we realised we couldn’t continue dinner without compromising our morning service. The service we’ve worked so hard to build and protect.

So we made the difficult decision to pause dinner while we prepare for our next steps.

This wasn’t because dinner wasn’t working. Actually, that’s what makes it harder.

We are also still hopeful for the council approval we’ve requested. We genuinely want the opportunity to offer more Filipino food to our community, something different, something familiar, something so Pinoy. So we have somewhere to gather. 🇵🇭❤️

To everyone who called asking if we were open for dinner, to those who came hoping we could accommodate you, especially those who travelled from neighbouring towns, thank you. Truly. 🥹❤️

You may never know how much those moments meant to us.

We hope that when the time comes for us to open dinner again, you’ll still be here.

For now, we’ll keep going. Keep learning. Keep adjusting. Keep showing up.

Thank you for understanding our little business, for being patient with us, and for growing with us.
