Bubble Waffle/ Egg Waffle (aka ‘Gai Daan Zai’ in Cantonese) is one of the most popular street food in Hong Kong - it's crunchy on the outside while each "bubble" is airy and gooey on the inside.
Hong Kong bubble waffles were invented after the war when the economy was bleak. Businesses would find ways to reinvent and utilize their meager supplies. It was likely that a grocery shop owner invented it to utilize unsold eggs. With flour and sugar - ingredients easily found in shops - egg waffles were born.*
