OCEAN TROUT is one of the absolute best eating fish in the ocean. It looks better than Atlantic Salmon, but it seriously tastes 100 times better. But it is very expensive... So, it's special treat week at GGT. I've decided to let the ocean trout be the star & let my Thai Yum salad be the supporting act.

All handmade into various Asian delicacies. Robertson is home to 3 of the absolute best farms in Australia – Moonacres Farm, Wildwood Hill Wagyu Farm & Robertson potatoes. So, on Saturday at Mittagong Markets (8-2.00 pm), I am showcasing the amazing fresh produce from all 3 farms. Now, that’s what I call farm to plate!

Ban Pho is a small district, with a population of less than 3000, about 1½ hours east of Bangkok. Originally made as a house curry, it quickly became popular with neighbours and then the local Thai restaurant. It is now sold in several restaurants in Bangkok and now by Gung’s Gourmet Thai in Australia. The dominant flavours are fresh galangal, fresh turmeric & peppercorns so it is quite different. I have stayed true to the recipe with the only innovation being using Schottlanders (Gerringong) Wagyu hanger.
