Buckwheat has always fascinated me.
Despite its name, it isn’t wheat. It’s a naturally gluten-free seed with an earthy, nutty character that gives baking its own personality.

Nutritionally, it offers protein, fibre, minerals and naturally occurring plant compounds including rutin.

And something I particularly love: buckwheat is grown here in Tasmania.

Back in my country, which is South Korea, people drink roasted buckwheat tea a lot, and that's been one of my favorite teas.

One of the biggest misconceptions about sourdough is believing that more hours automatically mean better fermentation. Time is only one piece of a much larger picture.

Fermentation depends on how active the wild yeast and lactic acid bacteria are. Their activity is influenced by flour quality, available nutrients, hydration, temperature, starter strength, and even the amount of starter added to the dough. These factors determine how quickly acids develop, lowering the dough’s pH and transforming its flavour, texture, and structure. That’s why two doughs fermented for exactly twelve hours can behave completely differently.

Great sourdough isn’t created by following a fixed number of hours—it’s created by understanding the living process behind every loaf.
