Come in and meet Luigi, the head chef and owner of Luigi's Cafe. Luigi's dream of becoming a top

chef started at the tender age of six and by the age of nine he was already peeling potatoes in his grandfather's restaurant in the northern Italian city of Trieste. At the age of 14 Luigi started an apprenticeship with two star Michelin chef Angello Paracucchi whilst frequenting the renowned hospitality school Alberghiero di Stato in Trieste. After five gruelling years the well prepared, yet inexperienced, Luigi was scooped up by three star Michelin star chef Gualtiero Marchesi, considered by many as the founder of modern Italian cuisine
