Forty plus years of kitchens are written in Stewart's hands. Broad, worked, thick-fingered - Stew calls them sausage fingers - marked by the old burns and the years of the job. They move without him thinking about it.

A lifetime of cooking leaves its mark, the kind that only comes from doing the work properly, day after day, until it lives in your hands.

You won't see most of what they do. But it's all there on the plate.

There's a bit of Venice on the menu this Thursday: fettuccine with roasted chicken, currants and pine nuts. Sweet against savoury, and just one of our five pastas on show:

- penne al forno + bolognese
- fettuccine + roasted chicken + currants + pine nuts
- salmon ravioli + lemon cream
- gnocchi + cauliflower + bacon + sage
- trofie + mushrooms + walnuts

There's something on in Rutherglen this Friday. Winemakers of Rutherglen Dark Side of Wine opens at All Saints - candlelight, a concert, the whole region lit up after dark. Ten nights of it, all across the region.

We're staying open late for bookings until 9pm for anyone heading back into town afterwards. Come and sit down, warm up, eat something good to finish the night.

This is where the menus come from. Stewart, a pen, and a lot of crossing out.

Thirty-odd years of cooking and he still writes every menu by hand, start to finish, testing it in his head before it gets anywhere near a plate. He's onto the new one now. We're not allowed to talk about it yet.

Years ago I worked a season in Livigno, up near the Swiss border, where pizzoccheri is just what you eat when it's cold. Buckwheat pasta, cabbage, potato, melted cheese, a lot of butter and sage. Not elegant. Completely wonderful.

Stewart's putting it on this Thursday. It tastes like that winter to me.

Alongside it:
spaghetti + monkfish fra diavola - chilli, tomato + oregano
orecchiette + venison, red wine + mushroom ragu
casarecce + soppressa, caramelised onion + olives
baked gnocchi + roasted capsicum, tomatoes + whipped ricotta

A full house for Sunday's Alpine Long Lunch. French onion soup under a gruyère and tarragon soufflé, venison with tartiflette, trout almondine, apple strudel to finish - and wines chosen just for the day to go with it.

This is our favourite kind of day: the place full of people gathered together enjoying good food and company, the room loud in the best way.

Just as good as grandma's

That's what a guest told us about Stewart's bread and butter pudding. High praise, and we're not going to argue.

Warm from the oven, soft in the middle, just enough crunch on top. Marmalade glaze and a hint of whisky - that's Stew's Scottish touch. The kind of thing winter was made for.
