La Paz Batchoy is Iloilo. A noodle soup from a market in the city — rich pork broth, egg noodles, and chicharon crumbled over at the end while it's still hot. The sound it makes when it hits the broth is the whole experience.

To the ones who are far from their own dads today — we understand. We're far from ours too. But the crispy pata's the same, the adobo's the same, and the table's open if you need somewhere to feel close to home today.

Our tatay never said much.

He'd just sit at the head of the table, wait for everyone to start eating, then go back for seconds before anyone noticed he hadn't said a word about how good it was.

That was his way of saying it was good.

This Sunday is Father's Day back home — and for a lot of us here in Australia, it's still the day we think of him. The dad who worked the long shifts. The one who taught us how to eat lechon properly (skin first, always). The one who still calls just to ask if we've eaten.

Bring him in this weekend. Or order his favourite and bring it to him. Either way, the table's ready.
