The first Pinot Noir released from Bellvale under the Gjergja family, it offers a glimpse of what’s to come from this 19-hectare Gippsland vineyard.⁠
⁠
Max describes a distinctive expression of the region’s deep red volcanic soils, with “mellow earthiness”, autumnal red fruits, fine, silky tannins and a comforting finish.⁠

O’Connor short rib, cheddar and Fino, onion consommé.⁠
⁠
Inspired by a steak, cheese and onion pie, the short rib is heavily charred over the open-fire grill before being slow cooked for 14 hours. Served with a cheddar and Fino sabayon, roasted maitake mushrooms, caramelised onion, puff pastry and burnt onion consommé.

Using minimal herbicides and pesticides, water retention, and producing compost from our grape marc, spent lees and paper waste are just a few of the initiatives we enact at the Estate.⁠

The 2025 Pinot Noir marks the first release from Bellvale under the Gjergja family, following their acquisition of the 19-hectare Gippsland vineyard last year.⁠
⁠
Described by Max as a “tantalising glimpse of things to come”, the w**e speaks distinctly of its cool-climate origins and deep red volcanic soils, with autumnal red fruits, fine, silky tannins and a comforting finish.⁠
