At the Levantine souk (markets) this unique ice cream is pounded with large wooden sticks to the right consistency and served with lashings of pistachios. Served here without the usual theatre of beating, this booza is
hand made with the authentic recipe including Sahlab and Mastica. Sahlab – the ground roots of the orchid orchus mascula and Mastica – the gum from the mastic tree, combine to give this ice cream the texture and flavour that make it so remarkable.
