There are moments in life, and in business, that feel like turning a page (hint, my book Entrecôte, Depuis 2015 hits the shelves in three weeks.. hehe!
As Entrecôte moves towards ten years .. ten extraordinary, challenging and beautiful years - i find myself reflecting on just how much of this story has always been about people. The people who believed in my stupid idea of originally just opening a ‘pop up’ doin one dish, who stood beside me, who poured their heart into every service, every plate, every guest experience.
And now, as we begin this next chapter, our next DECADE .. it gives me enormous joy to welcome two remarkable people to our maison - Carlo Grossi and Henry Salt.
My dear friend Carlo joins us as General Manager, bringing with him a depth of hospitality experience that is truly exceptional. There is a warmth, an elegance and an instinctive understanding of service that Carlo embodies so effortlessly - the kind of hospitality that makes people feel not just looked after, but genuinely welcomed.
And then there is Henry.
A young talent in the kitchen, with such precision, restraint and respect for produce. His approach to food feels deeply aligned with everything I have always wanted Entrecôte to be - soulful, generous, refined and always centred around the table.
As we step into our tenth year, I could not be more excited for what is to come.
To Carlo and Henry - bienvenue. I am so proud to have you both become part of our story.
The next chapter begins here, and I truly believe it is going to be something very special. Mr Jones x
