Honey miso cake, beurre Bosc pear, rye sourdough caramel, toasted jasmine rice ice cream.

Built on savoury notes of rye sourdough and miso, this dessert celebrates some of the finest ironbark honey we’ve ever tasted from Kecah Beekeeping. Beurre Bosc pears are gently poached with cardamom and vanilla, finished with bronze fennel, toasted jasmine rice ice cream and honey cut from the comb served frozen table-side.

A dessert that balances sweet, savoury and aromatic flavours capturing the essence of winter in the Hunter Valley.

Troy’s winter garden, cobia collar sauce gribiche

Our new share first course. A beautiful snapshot of the garden that week, with a side of pickles from the season before.

Raw: purple daikon, Hirosaki turnip, kabu turnip, Merlot wombok, ivory white kale, Frank’s peas, purple oxalis, nasturtium and flower, borage, sunrose, mustard leaf sprayed with our bunya vinegar.

Pickled: rhubarb, zucchini, green tomato, biquinho, alyssum.

To dip: roasted cobia collar and wild onion gribiche.

Wafers: buckwheat rosemary and sourdough mustard.

For those wanting to indulge a little more, our snacks menu offers a selection of extras, with the ever-popular kangaroo skewer, scotch egg and Muse Coconut still featured.

Last week, the 15th Annual Hunter Valley Food Fight brought together four of the region’s chefs, Chris Thornton, Tim Montgomery, Michael Robinson and our own Troy Rhoades-Brown, for a fantastic afternoon with 400 amazing guests.

A true success, a wonderful sense of community, and most importantly, an event that inspires the next generation of front of house and young chefs to take their careers to the next level.

Japanese clay pots ‘Donabe’.
Collaborating with beautiful, talented people is one of the most rewarding parts of this industry. These pots will become a special part of Muse over the coming years.

Refined, yet wholesome and rustic, they carry such a strong sense of region and tradition. The porous clay used for Donabe holds and distributes heat incredibly gently and evenly, creating a soft, steady cooking environment. Designed to be generational pieces, they tell stories, create memories and naturally gather people and conversation at the table.

On Sunday, the Muse team made an excursion to Newcastle to take over Roundhouse for a long lunch. We couldn’t have asked for a better day. Stunning views, a buzzing room and an enjoyable service. Thanks for having us and to our guests for joining us. What a day!
