Mum has been vegetarian. Not loudly. Not as a statement. Just quietly, the way she does most things.
When we first opened in O’Connor, one of her quiet dreams was to have a vegan menu on the board. Of course she wanted that.
We tried. We really did.
But here’s the honest truth: our kitchen is a busy, loving, slightly chaotic family space. Butter, eggs, dairy, crackling roast pork, lemongrass chicken — it’s all happening, every single day.
We know that for many of our vegan friends — especially those following strict religious or personal diets — even a trace of animal products, or elements like onion and garlic, isn’t just a preference. It’s something that matters deeply.
A kitchen like ours simply can’t promise that. And promising something we couldn’t guarantee? That felt like the least compassionate thing we could do.
So, we chose honesty instead.
Some of you may have already noticed — our vegan menu has quietly evolved into something we’re calling our ‘Veterian’ menu: vegetarian, made with care, and built entirely on Mum’s quiet philosophy.
She said it to me once, and I’ve never forgotten it:
“For me, being vegetarian is just about connecting with the life around us, making the body and soul feel lighter and closer to the world. It’s never about judging others or proving a point. If the path to compassion makes you harsher, angrier, or resentful toward the people around you — maybe something got lost along the way.”
That’s the food we want to make. That’s the table we want to set.
Our classic menu isn’t going anywhere — the crispy pork belly, the lemongrass chicken, and all your favourites. We’re still the same Bussin’ Buns, same family, same heart.
And for our veggie friends — your bánh mì is still here. Still packed with love. Still made with zero shortcuts. And honestly? Still pretty damn good.
Just good food, with a little bit of Mum’s quiet philosophy baked right in. 🤎
