I'm sure everyone has a favourite condiment that they like to accompany with their meals. Whether it's ketchup, chilli oil or mayo, the dish somehow doesn't taste 'quite right' without it.

My favourite is the Dijon mustard (of course! 😉🇨🇵). Coming at a very close 2nd is chutneys. Thank you to the Indian culture for bringing chutneys to the culinary world! Even if I don't cook Indian food myself, I love to make chutneys to add an extra punch to my cooking.

~~~ A 2 Hour Bath ~~~
It's important to marinate your protein for the right amount of time.

For a delicate piece of fish, a good 30 minutes is usually sufficient, depending on the thickness. Beef and pork needs more time. For best results, overnight is better. For poultry, 2 hours is just right.

The marinade gives the protein with so much flavour and it also helps tenderise the flesh. It's a simple process that can take extra prep time, but it's so worth it!!

In this coming weekend's box, we will be featuring the lamb pastilla for main course. Although it gets it's name from Spain, it is actually a very old recipe from Morroco.

The lamb is braised with spices, fruits and citrus., then wrapped in filo pastry to give it a 2nd texture. It's savoury, earthy and hearty. Perfect for the cold winter nights.

Highly recommend it with a glass of merlot or cabernet sauvignon 🍷

Did you know that peaches belong to the rose family? Eventhough it is one of my favourite stone fruits, I certainly did not know that! You do learn something new every day! 😁

Not only are they high in vitamins, but they're also low in calories and have no saturated fats. More reason to munch into one!

~~ To Crust Or Not To Crust ~~
Some food trends come and go (sometimes as quickly as they appear), some linger around. The Basque cheesecake seems to be from the latter. This crustless creation originally from the Spanish side of the Basque Country now has flavours ranging from the classic to chocolate and even durian!

However, long before we've even heard of the Basque cheesecake, gateau Basque from the French side was the craze. Created in the 18th century, it was a very popular dessert consisting of a cherry jam or custard enclosed in a buttery pastry.

In this box, I have chosen to include my version of the gateau Basque as it evokes a lot of childhood memories for me. Maybe it will make a comeback and become the next viral dessert? 😅
