~~~ Curry On ~~~
When the nights are cold, I crave stomach-warming food. Growing up in a French household, the usual go-tos were slow cooked or braised dishes like Boeuf Bourguignon.
However, after leaving France and exploring the world as a young chef, I'd discovered that there are other methods used in cooking to get the same comforting effect.
One of my favourite ways now is the use of spices. It doesn't have to be heavy-handed as the right balance will warm you from the inside out.
In this box, I will use a combination of Western and Asian techniques to pair the light, aromatic green curry sauce with the savoury flavours of lamb wrapped in short crust pastry.
