DEFIALY 'Rouge!!' is a 2024 Cab Franc grown organically in the Macedon Ranges and blended with a touch of Malbec and Pinot Noir. This one is lighter in style than classic Francs, with 7 days of carbonic maceration, and aged in a combination of terracotta amphora and oak.⁠

Sweet little side note, 'defialy' (don't ever forget I'll always love you) is how winemaker Micah Hewitt's parents signed off on his cards growing up.

One of our staff favourites- Bande Apart Aligoté 2023.

A beautiful Burgundian grape that has shone in Jess DiGiorgio's King Valley vineyards. Handpicked, fermented with wild yeasts and aged in old French oak, this is all that remains of a very small allocation (3 barrels), so give it a try while you can.
